Wild Ale – American 10 ABVCommercial Description:Consecration is a Dark Ale aged in Cabernet Sauvignon barrels from local wineries. It is aged for 8-12 months with currants Brettanomyces Lactobacillus and Pediococcus. Consecration is one of our Lambic-style beers. We ferment the base beer for Consecration in stainless steel and after fermentation it is transferred to the barrels with the fruit and Brettanomyces (added at the same time). Two to three months into barrel-aging the souring bacteria is added.
