In simple terms the Solera System means that every year a small portion of a wine is drawn from a row of barrels which is then replenished with young wine. The young wine quickly takes on the characteristics of the older wine (this is not unlike using a sourdough starter to make bread). On the whole this process produces wine with an increasing complexity as the years pass.The Solera is the sum of our history in a bottle. The Solera System (the barrels used and the wine produced in this fashion) takes us back to our very beginnings in 2006. We replenish the barrels with only our best vintages. With our solera system we have produced a total of 1251 litres of wine which is divided between 450 226 and 125-litre barrels. However we never draw off more than 150 litres (or 300 bottles worth of wine) a year because we want to preserve and refine the unique character of our system! All our bottles are numbered and marked with our signature. The bottling year is marked with a hashtag (#).
